Congratulations to Grace Rampacek!

Congratulations to Grace Rampacek who received the People’s Choice Award for her Butternut Squash Soup at Habitat for Humanity’s Annual Soup Cook-off this past Saturday! Grace was kind enough to share her recipe, see below.

Grace’s  Caramelized  Butternut Squash Soup

  • 3 tablespoons extra-virgin olive oil
  • 3 pounds butternut squash, peeled and cubed
  • 1 large onion, sliced
  • 3 tablespoons butter
  • 1 tablespoon sea salt
  • 1 teaspoon freshly-cracked white pepper
  • 4 cups chicken or veggie broth, or more as needed
  • 1/4 cup honey
  • 1/2 cup heavy whipping cream
  • 1 pinch ground nutmeg, or more to taste
  • salt to taste
  • ground white pepper to taste

  1. Heat olive oil in a large pot over high heat. Cook and stir squash in hot oil until completely browned, about 10 minutes. Stir onion, butter, sea salt, and cracked white pepper into the squash; cook and stir together until the onions are completely tender and beginning to brown, about 10 minutes.
  2. Pour chicken broth and honey over the mixture; bring to a boil, reduce heat to medium-low, and cook at a simmer until the squash is tender, about 5 minutes.
  3. Pour the mixture into a blender no more than half full. Cover and hold lid in place; pulse a few times before leaving on to blend. Puree in batches until smooth.
  4. Stir cream, nutmeg, salt, and ground white pepper into the soup to serve.

Support UMCOR Response to Hurricane Sandy Relief

UMCOR Hurricane Sandy“As large as the monster Sandy is, the church is larger and more powerful in its preparations, its spirit and its capacity to be here for years to come,” said the Rev. Tom Hazelwood, UMCOR Assistant General Secretary for U.S. Disaster Response.

The United Methodist Committee on Relief (UMCOR) is a ministry of The United Methodist Church, their goal is to assist the most vulnerable persons affected by crisis or chronic need without regard to their race, religion, gender, or sexual orientation. UMCOR’s work reaches people in more than 80 countries, including the United States.  They provide humanitarian relief when war, conflict, or natural disaster disrupt life to such an extent that communities are unable to recover on their own.

Here are three ways to help UMCOR respond to Hurricane Sandy:

  1. Text RESPONSE to 80888 to give a $10 donation to support disaster response
  2. For your Sunday offering, make a check payable to your church and write “UMCOR Hurricanes 2012″ in the memo line
  3. Donate online to UMCOR US Disaster Response, Advance #901670, and select Hurricanes 2012 from the drop-down menu.
